The Eureka Emblem Club #298 is presenting an evening of Italian cookery with Arcata’s PastaLuego restaurant owner, Coco Maki. The class will take place on Thursday, June 21, 2018 at 6:00 p.m. at The Lodge. The price is $40 prepaid. Reservations are mandatory.
Maki’s Emblem class, which is a night of Italian cooking, will include how to design an authentic Italian antipasti platter and putting together charcuterie trays. She will highlight recipes for browned butter and sage with gnocchi, truffle cream and peas with Gigli pasta, and a marinara with Bucatini. There will be tastings of all the recipes.
The evening will also include a recipe and samplings of PastaLuego’s fresh garlic cheese spread baked on bread. “We will be trying the spread on freshly baked no-knead bread,” stated Suzie Owsley of the Eureka Emblem Club. “Bread baked by our Emblem Cooking Class Team, made especially for this class to enjoy. This team is the reason that the Emblem Club cooking classes have been so successful. They are an extremely dedicated group of women and men who work the classes assisting the guest chefs with prepping ingredients, cooking, decorating the tables, and serving. We could not do it without them.”
The class will end with Maki showing participants how to literally whip up a tiramisu mousse, a coffee fla-
vored dessert thought to have hailed from the Veneto region of Italy in the 1960’s.
